Pochle — Pochle is a zero-waste ini­ti­at­ive that makes use of sur­plus apples from in and around Edinburgh.
We hand col­lect apples from private trees, farms, walled gar­dens, com­munity orch­ards and some com­mer­cial orch­ards. These are then pressed into a juice which is fer­men­ted to a cider and then dis­tilled into our spir­it. This ‘eau de vie’ is then res­ted before being bottled as a white spir­it that has been painstak­ingly cre­ated to go very well with ton­ic and a slice of orange.
